Greek-style stuffed chicken breasts: Juicy chicken filled with feta cheese, roasted red peppers, artichoke hearts, and Kalamata olives. A flavorful Mediterranean dish ready in about 30 minutes!

You will need it!
Ingredients
125 ml (1/2 cup) of crumbled feta cheese
125 ml (1/2 cup) diced roasted red peppers
1 can (398 ml) of artichoke hearts cut into thin quarters
10 ml (2 tsp) of El-Ma-Mia Greek-style potato seasoning
4 skinless chicken breasts
Optional
80 ml (1/3 cup) sliced Kalamata olives
Steps
Preheat the oven to 205 °C (400 °F).
In a bowl, mix the feta with the peppers, artichoke hearts, potato seasoning and, if desired, the olives. Set aside.
Cut the chicken breasts in half lengthwise, without slicing them completely.
In an oven-safe skillet, heat a little olive oil over medium heat. Brown the chicken breasts for 1 to 2 minutes on each side. Remove from heat.
Stuff the breasts with the artichoke mixture. Secure the breasts closed with toothpicks.
Continue baking for 12 to 15 minutes, until the inside of the breast meat has lost its pinkish hue.
