Crumbled tofu tacos

Crumbled tofu taco recipe: Flavorful crumbled and seasoned tofu served in corn tortillas with vegetables and creamy sauce. Easy to prepare and perfect for a vegetarian dinner!

You will need it!


Ingredients


  • 1 block of firm tofu weighing 454g

  • 30 ml (2 tbsp) of olive oil

  • 8 small corn tortillas

  • 1/2 small red onion, diced

  • 8 cherry tomatoes, quartered

  • 30 ml (2 tbsp) fresh coriander leaves


For the guacamole

  • 1 crushed avocado

  • 1 lime (zest and juice)

  • 30 ml (2 tbsp) chopped fresh coriander

  • Salt and pepper to taste


For the sauce

  • 30 ml (2 tbsp) of soy sauce

  • 30 ml (2 tbsp) of rice vinegar

  • 30 ml (2 tbsp) El-Ma-Mia tofu taco seasoning

  • 15 ml (1 tbsp) of tomato paste

  • 15 ml (1 tbsp) of cornstarch

  • 10 ml (2 tsp) of honey

  • 10 ml (2 tsp) chopped garlic

  • Salt and pepper to taste


Steps


  1. In a bowl, mix the guacamole ingredients. Set aside.

  2. In another bowl, mix the sauce ingredients.

  3. Pat the block of tofu dry with paper towels. Crumble the tofu with your hands.

  4. In a pan, heat the oil over medium heat. Brown the tofu for 2 minutes, stirring.

  5. Pour the sauce into the pan and cook for 3 to 4 minutes over low heat.

  6. Meanwhile, in a small pan, warm the tortillas for a few seconds on each side.

  7. Fill the tortillas with tofu, guacamole, onion, cherry tomatoes and cilantro.
