Tofu corn tacos

Tofu corn taco recipe: Seasoned firm tofu, colorful vegetables, black beans, and sour cream in small corn tortillas. Quick and easy, perfect for a vegetarian meal in about 30 minutes!

Ingredients


  • 1 block of firm tofu weighing 454g

  • 20 ml (4 tsp) El-Ma-Mia tofu taco seasoning

  • 160 ml (2/3 cup) of 14% sour cream

  • 45 ml (3 tbsp) of olive oil

  • 1/2 can (540 ml) of black beans, rinsed and drained

  • 1/2 small red onion, finely chopped

  • 1 sliced red bell pepper

  • 125 ml (1/2 cup) of corn kernels

  • Salt and pepper to taste

  • 8 small corn tortillas

  • 360 ml (approximately 1 1/2 cups) of shredded romaine lettuce

  • 1 lime (juice)


Steps


  1. Pat the tofu dry with a cloth. Cut the tofu into sticks.

  2. In a bowl, mix the tofu sticks with 15 ml (1 tbsp) of taco seasoning. Let stand for 10 to 15 minutes.

  3. In another bowl, mix the sour cream with the remaining taco seasoning.

  4. In a skillet, heat the oil over medium heat. Brown the tofu sticks for 2 to 3 minutes on each side. Add the beans, onion, bell pepper, and corn, then stir. Season with salt and pepper.

  5. In another pan heated over medium-high heat, brown the tortillas for 15 to 30 seconds on each side.

  6. Top the tortillas with the tofu mixture, seasoned sour cream, lettuce, and lime juice.
