Tuna and chickpea salad

An easy and nutritious tuna and chickpea salad: a mix of tuna, chickpeas, bell peppers, avocado, and a light vinaigrette. Perfect for a healthy lunch or a light meal in under 15 minutes!

Ingredients


  • 3 diced bell pepper halves of various colors

  • 2 diced avocados

  • 2 cans of tuna, 170g each, drained

  • 1 can of chickpeas (540 ml), rinsed and drained

  • 125 ml (1/2 cup) of store-bought Catalina salad dressing

  • El-Ma-Mia salad seasoning, to taste

  • 1 small red onion

  • 1 Boston lettuce


Steps


  1. In a salad bowl, mix the peppers with the avocados, tuna, chickpeas, red onion and vinaigrette.

  2. If desired, divide the Boston lettuce leaves among the bowls. Top with the chickpea salad. Sprinkle with salad dressing.
